Ingredients

  • 2 pounds chicken wings preferably fresh and plump
  • 1 cup baking powder for drying and crisping
  • 1 cup hot sauce Frank’s RedHot or similar
  • 2 tbsp butter melted
  • 1 tsp vinegar white or apple cider
  • 1 tsp garlic powder or minced fresh garlic
  • to taste salt optional, for seasoning
  • 2 stalks celery sticks for serving
  • 1/2 cup blue cheese dressing or ranch for dipping

Equipment

  • Deep fryer or large pot
  • Mixing bowls
  • Baking sheet
  • Tongs
  • Cooling rack

Method

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with foil. Pat the chicken wings dry thoroughly with paper towels to remove excess moisture, which helps achieve crispiness.
  2. In a large mixing bowl, toss the wings with baking powder until evenly coated; this will help create a crispy skin during baking.
  3. Arrange the wings in a single layer on the prepared baking sheet, leaving space between each piece for even cooking.
  4. Bake the wings in the preheated oven for about 40-45 minutes, flipping halfway through, until they are golden brown and crispy with bubbling skin.
  5. Meanwhile, make the buffalo sauce by combining hot sauce, melted butter, vinegar, garlic powder, and a pinch of salt in a small bowl. Whisk until smooth and well blended.
  6. Once the wings are crispy and out of the oven, transfer them to a large bowl. Pour the hot buffalo sauce over the wings and toss vigorously to coat them evenly.
  7. Serve the wings hot with fresh celery sticks and a side of blue cheese dressing for dipping. Enjoy the satisfying crunch and spicy tang with every bite!

Notes

For extra crispiness, allow wings to dry in the fridge uncovered for a few hours before baking. Reheat leftovers in a hot oven to restore crunch.
