- Preheat your oven to 375°F (190°C). Cut the tops off each bell pepper and scoop out the seeds and membranes with a small spoon or knife, creating a hollow space and setting aside the tops for later.
- Use a small carving tool or paring knife to carefully carve a spooky face or simple jack-o'-lantern features into each pepper, making sure to leave enough thickness for stability and filling.
- Mix the shredded cheese, cooked rice (if using), and seasoning together in a bowl until well combined. This mixture will be your filling.
- Spoon the cheese mixture into each carved pepper, pressing gently to pack the filling in and ensure it stays in place during baking.
