Method

  2. Use a small carving tool or paring knife to carefully carve a spooky face or simple jack-o'-lantern features into each pepper, making sure to leave enough thickness for stability and filling.
  3. Mix the shredded cheese, cooked rice (if using), and seasoning together in a bowl until well combined. This mixture will be your filling.
  4. Spoon the cheese mixture into each carved pepper, pressing gently to pack the filling in and ensure it stays in place during baking.
  5. Place the filled peppers on a baking sheet lined with foil or parchment paper. Drizzle the outside with olive oil to help with roasting and create a nice toasted edge.
