  • 4 large carrots peeled and cut into 2-inch pieces
  • 2 tablespoons honey preferably floral or good quality
  • 3 cloves garlic minced
  • 1 teaspoon fresh thyme or rosemary chopped
  • 2 tablespoons olive oil extra virgin preferred
  • to taste sea salt flaky or coarse
  • to taste black pepper freshly ground
  • 1 lemon lemon for optional squeeze after roasting

Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Peel the carrots if desired, then cut them into uniform 2-inch pieces to ensure even cooking.
  3. In a large mixing bowl, combine the carrots with minced garlic, chopped herbs, olive oil, and honey. Toss everything together until the carrots are evenly coated and glossy.
  4. Spread the coated carrots out in a single layer on the prepared baking sheet, making sure they aren’t crowded to promote caramelization.
  5. Place the sheet in the oven and roast for about 30-35 minutes, shaking the pan halfway through to ensure even cooking and caramelization.
  6. Check the carrots: they should be tender when pierced with a fork, with edges beautifully caramelized and a fragrant aroma of garlic and honey filling the air.
  7. Remove from the oven and let sit for 5 minutes; then, optionally, squeeze fresh lemon juice over the carrots for brightness.
  8. Sprinkle with a little flaky sea salt and additional herbs if desired, then serve warm for a glossy, flavorful side dish.
