Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 red bell pepper bell pepper sliced into strips
  • 1 small zucchini sliced into thin rounds
  • 2 tablespoons olive oil good quality, fruity preferred
  • 2 cloves garlic minced
  • 1 lemon lemon zest and juice
  • 1/2 teaspoon smoked paprika optional for warmth

Method
 

  1. Preheat your oven to 220°C (425°F) and line a large sheet pan with parchment paper for easy cleanup.
  2. In a mixing bowl, toss the sliced bell pepper and zucchini with 1 tablespoon of olive oil, a pinch of salt and pepper, and the smoked paprika. Spread the vegetables evenly across the prepared sheet pan.
  3. Place the pan in the oven and roast the vegetables for about 15 minutes, until they start to soften and develop golden edges.
  4. Meanwhile, prepare the shrimp by tossing them in a bowl with the remaining 1 tablespoon of olive oil, minced garlic, lemon zest, and half of the lemon juice. Season with salt and pepper to taste.
  5. After the vegetables have roasted for 15 minutes, remove the pan from the oven and evenly distribute the seasoned shrimp over the vegetables.
  6. Return the pan to the oven and roast for another 8–10 minutes, until the shrimp are pink, opaque, and slightly firm, and the vegetables are tender and caramelized.
  7. Remove the sheet pan from the oven, squeeze the remaining lemon juice over the top, and garnish with fresh herbs if desired. Let sit for 2 minutes to allow flavors to meld.
  8. Serve the vibrant, crispy shrimp and vegetables directly from the pan, enjoying the bright flavors and tender textures.

Notes

Feel free to swap in your favorite vegetables like asparagus or cherry tomatoes. Adjust seasoning to your taste, and add herbs like basil or parsley at the end for extra freshness.
