  • 8 oz mushrooms cremini or shiitake, sliced
  • 3 cloves garlic minced finely
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 1/2 lemon lemon juice freshly squeezed
  • Salt and pepper to taste
  • Fresh herbs parsley or thyme chopped, for garnish

Method
 

  1. Peel and devein the shrimp, then set aside. Slice the mushrooms into thick pieces and mince the garlic finely.

  3. Sauté the mushrooms for 5-7 minutes, stirring occasionally, until they turn golden brown and release their fragrant aroma.
  4. Push the mushrooms to one side of the pan. Add the butter to the empty side and once melted, add the shrimp.
  5. Sauté the shrimp for about 2-3 minutes per side, until they turn opaque and pink, making a gentle sizzling sound.
  6. Add the minced garlic to the pan and cook for 30 seconds, stirring constantly until fragrant, but not browned.
  7. Pour in the lemon juice and give everything a gentle toss. Let the sauce simmer for a minute to meld the flavors and reduce slightly.
  8. Season with salt and pepper to taste. Sprinkle with chopped herbs for freshness, and give the mixture a final stir.
  9. Remove the skillet from heat when the shrimp are just cooked through and the mushrooms are tender but still hold their shape. Serve immediately over rice or crusty bread for a complete, satisfying meal.
